1.1 Ingredients

  • 70 g fresh milk

  • 70 g coconut milk

  • 7 g condensed milk

  • 5 g pandan powder

  • 620 g water (reserve a small amount to mix with the pandan powder)

  • 20 g jelly powder

  • 25 g refined sugar

1.2 Instructions

Step 1: Prepare the coconut milk mixture

  • Pour fresh milk, coconut milk and condensed milk into a pot. Heat over low heat, stirring gently until the mixture starts to simmer, then turn off the heat. After that, let it cool slightly.

Step 2: Cook the pandan jelly

  • Dissolve 5 g of pandan powder in about 20 g of water.

  • In another pot, pour in the remaining water, then add the jelly powder and sugar. Stir well, then boil for about 30 seconds.

  • Let the mixture cool down to about 70°C, add the diluted pandan mixture, then stir until well mixed. When it cools to around 60°C, pour it into bottles or molds and let it set.

Step 3: Add the coconut milk layer

  • Once the jelly is firm, pour the coconut milk mixture on top. Use a straw to poke gently so the jelly breaks into small pieces.

2. Coffee coconut milk jelly with layered texture

  • 17g agar powder

  • 1 liter water

  • 220g sugar

  • 2g coffee powder

  • 100ml coconut milk

  • Boil 350ml of water, add 7g of agar powder and 100g of sugar. Stir until dissolved.

  • When the mixture turns clear, turn off the heat then add fresh milk together with coconut milk. Mix well, then pour into a mold as the first layer.

While waiting for this layer to set, you can prepare the coffee layer.

  • In another pot, add 650ml water, 10g agar powder, 120g sugar with 2g coffee powder. Stir evenly on low heat then cook until the mixture becomes clear. After that, remove it from heat.

  • Gently pour the coffee mixture over the coconut milk layer once it has slightly set.

  • Continue alternating between coconut milk and coffee layers until all of the mixture is used.

Let it cool completely, then refrigerate for about 2 hours. Cut into small pieces before serving.
