2. Production process of GC Food coconut jelly products

2.1 Fermentation stage

After harvesting, fresh coconut water is pasteurized to remove natural microorganisms, then inoculated with Acetobacter xylinum to begin fermentation.

Under carefully controlled acidity and temperature, the bacteria change the natural sugars in coconut water into cellulose, forming a thick and smooth jelly layer on the surface of the liquid.

After about 8 to 10 days of fermentation, the jelly is fully formed, then washed thoroughly to remove impurities and any residues.

2.2 Shaping and processing stage

  • Soaking, peeling, and cutting: The harvested jelly is soaked in clean water until it expands and lightens in color, then passed through an automatic peeling and cutting system to make different shapes like cubes, strands, or thin slices.

  • pH adjustment: The jelly is washed several times to balance its pH level and remove any sourness.

  • Sterilization cooking: The jelly is cooked in high-pressure boilers at high temperatures to complete the sterilization process.

2.3 Packaging stage

After processing, the coconut jelly is packed together with syrup in pouches, jars, or cans. The final sterilization step is done at carefully controlled temperatures to keep its signature crunchy texture, natural flavor, and long shelf life.

Signature nata de coco: Partners can choose between unsweetened jelly or jelly in syrup. The Signature line comes in various sizes (from 3×3 mm to 5×5 mm) and is packed in aseptic bags, PAPE bags, plastic jars, or drums, so it can be stored and shipped easily. It can last up to 12 months, and is very convenient for long-term use.

Mixed nata de coco: Available in multiple sizes (8 - 20 mm), this product is packed in bags, cans, or jars and exported by container (17 tons per 20FCL, 26 tons per 40FCL). It has a 12-month shelf life from the production date and should be kept in a cool, dry place away from direct sunlight.

Nata de coco cubes: These are cut into various sizes ranging from 6×6 mm to 15×15 mm, suitable for many culinary as well as beverage applications.

Pressed nata de coco: Raw jelly is pressed at different ratios such as 1:5, 1:6, 1:8, 1:10, which provides a satisfying chewy-crunchy texture.. The product also delivers the fresh, authentic taste of coconut and blends easily into drinks, desserts, and refreshers.

Shaped nata de coco: Produced in fun shapes like stars, hearts, sticks, strands, or pearls to make desserts more visually appealing. The product is available in PAPE bags, cans, or plastic jars for convenient storage and on-the-go use.

Flavored nata de coco: Offered in a wide range of natural flavors such as pineapple, coconut, caramel, and grape, each flavor has its own unique character and meets ISO/FSSC 22000 and Halal standards, perfect for both households and the F&B industry.
