1. Ingredients for making aloe vera milk tea
To make a perfect cup of homemade milk tea that's fragrant, creamy, and refreshing, you just need to prepare the following basic ingredients:
Oolong/Black Tea: 100g (choose a variety with a strong aroma)
Milk Powder: 150g
Granulated Sugar: 120g (can be substituted with rock sugar if you prefer a lighter taste)
Rock Sugar: 150g
Iodized Salt: 1 - 2 teaspoons (enhances the tea's flavor)
Ice cubes: Just enough
Fresh aloe vera: 2 branches (choose the kind with white, crisp flesh)
Lemon: 1 slice
Filtered water: 3.9 liters
Pandan leaves: 3 leaves
2. How to make tasty, crispy aloe vera jelly without the slime
2.1. Step 1: Peel and dice the aloe vera
Using a sharp knife, peel off the green outer layer and cut the white flesh into small, diced pieces. Remember to wear gloves to avoid getting the residue on your hands, which can cause itching.
2.2. Step 2: Soak in salt and lemon water
Pour enough water into a basin to fully submerge the aloe vera.
Squeeze a lemon and add 2 tablespoons of salt to the water.
Soak the aloe vera for about 15 minutes to remove the slime and reduce bitterness.
2.3. Step 3: Rinse thoroughly
Rinse the aloe vera with water until the aloe vera is no longer slimy.
If it is still slimy, gently mix the aloe vera with a small amount of granulated sugar for 3-4 minutes, then rinse again to clean it thoroughly.
2.4. Step 4: Blanch briefly
Bring a pot of water to a gentle boil.
Quickly blanch the freshly washed aloe vera for about 1 - 2 minutes.
Then, immediately remove it and soak it in a bowl of ice water.
2.5. Step 5: Soak in rock sugar (optional)
Boil 3 liters of water with pandan leaves and rock sugar until the sugar dissolves completely. When the water starts to boil, remove the pandan leaves immediately to avoid bitterness.
Turn off the heat, add the blanched aloe vera to the pot, and stir gently so that the aloe vera absorbs the sugar.
Wait for the aloe vera to cool, then put it in the refrigerator to make it crisper and cooler.

3. How to make creamy aloe vera milk tea
3.1. Step 1: Cook the tea water
Boil 1 liter of filtered water.
Put the tea in a tea bag/strainer to minimize tea leaves from mixing into the water.

Note: Brew or steep tea over low heat; for black tea, simmer for 5 minutes, while oolong tea only needs 1 minute.
3.2. Step 2: Cook the milk tea
Slowly add 150g of milk powder to the warm tea, stirring well.
Add 120g of sugar and a pinch of salt to balance the flavor, then whisk until dissolved.
3.3. Step 3: Assemble and enjoy
Choose a glass and add an appropriate amount of aloe vera jelly.
Pour in the chilled milk tea.
Add a few ice cubes and stir well.
Decorate with some basil seeds or chia seeds (if desired) for a healthier feel.
