  • 1 Ingredients for Aloe Vera and Mung Bean Sweet Soup

  • Banana oil
  • Kudzu starch
  • Lemon
  • Salt

2 How to Cook Aloe Vera and Mung Bean Sweet Soup

Step 1: Prepare the ingredients

After bringing home the aloe vera, use a knife to cut off the two rows of thorns along the sides of the stalks. Use a peeler to remove all the green outer skin.

Use a small basin to mix water and salt, then soak the aloe vera in it for about 10 minutes (note: do not make the salt water too concentrated). Rinse with water until the aloe vera is no longer slimy to the touch.

Use a knife to cut the aloe vera into small pieces, you can cut them into pomegranate seed size (or larger depending on your preference). Put them in a small bowl, squeeze the juice of 1 lemon into it, add water and soak for 5 minutes. Then rinse again with clean water.

Step 2: Cook aloe vera and mung bean sweet soup

Add about 2 liters of water to the pot + mung beans and simmer for 30 minutes until the beans are completely soft. While cooking, skim off all the foam on the surface. After that, add rock sugar and stir until it is completely dissolved. Depending on your taste, you can add just enough or make it sweeter (if you want to eat with ice).

Step 3: Finished products

After checking that the beans are completely soft, use a small bowl to mix tapioca starch with filtered water until very diluted, then slowly add it to the mung bean pot to create a certain thickness for the sweet soup. Next, add all the aloe vera into the pot. Once it comes to a boil, add banana oil or vanilla, then turn off the heat and let it cool.

3 Enjoy

Aloe vera mung bean sweet soup tastes best when served cold. If you don't like eating with ice, you can scoop it into a bowl and put it in the fridge; it will taste better. Or you can add ice directly to the sweet soup, it is still very delicious.
