2.1 Culturing, fermentation

A hint of sweetness with the bouncy texture of coconut jelly is part of many Vietnamese childhood memories. Unlike jelly made from powder, coconut jelly is created from the fermentation of pasteurized coconut water using Acetobacter xylinum bacteria.

With the right temperature and pH conditions, the bacteria will turn the natural sugar in coconut water to form a jelly-like layer of cellulose. After about 8 to 10 days, the nata layer is harvested and then carefully washed to remove impurities.

2.2 Shaping, preliminary processing

The nata layer is soaked in clean water then whitened. After that, it is sliced & cut into small cubes, noodle-shaped, or many new cute shapes that kids love.

For the next step, the nata is soaked again to remove residues and normalize the pH level. Finally, it is cooked in a pressure pot to eliminate bacteria, ensuring hygiene & food safety for products.

2.3 Packaging

The processed coconut jelly is packed into bags and then sterilized under controlled conditions to keep its best quality.
