  • Agar powder

  • Sugar

  • Young coconut meat

  • Pandan leaves (also known as screwpine leaves)

Step 1: Wash the pandan leaves and cut them into small pieces. Blend with a bit of water and strain to get the juice. Open the coconut to collect the coconut water and scrape out the meat.

Step 2: Mix sugar and agar powder in a bowl. Put water and coconut water into a pot and bring it to a boil. Add the agar–sugar mix slowly while stirring so it does not form lumps.

Step 3: When the pot starts boiling again, remove the foam so the jelly stays clear. Add the shredded coconut meat and cook it for one more minute. Turn off the heat.

Step 4: Pour the warm mixture into molds. Let it cool at room temperature, then place it in the fridge until firm. When set, cut into cubes and enjoy.

You will get a soft chewy jelly with a light green color and a mild pandan smell. The young coconut meat adds a small crunch and a creamy touch that goes well with the sweetness. You can also add fillings like cheese or flan if you want a richer version.
